Listán Negro Grano a Grano
Wine from a plot located in the center of the island of Lanzarote known as "Tomaren". This plot is cultivated with Listán Negro under loam of pre-phylloxera vineyards, centuries-old vines highly adapted to the harsh climate of the island of low rainfall and continuous trade winds.
This wine has been made with the minimum interventions in order to extract the maximum potential of the varietal. A manual harvest was carried out in and a careful selection of the grapes. In the winery, a manual destemming was carried out in order not to break the grain. After this work, alcoholic fermentation was carried out with the skins for 12 days. Shortly before its completion, the grapes were stepped on in a traditional way to break the grape grains with the feet. Finally, it was pressed and taken to a tank where the malolactic fermentation was carried out.
This elaboration has provided a wine with an intense, personal and different aromatic phase with hints of cherries, white flowers and light lactic nuances. It has a medium color layer and a very silky and cheerful mouthfeel due to the low extraction during its production. Delicate tannic sensation with ideal acidity.
