Tasting notes
Very expressive and varietal, it exhibits the unique character of the Malvasía Volcánica. The aromas of rose, orange blossom, orange peel and guava and notes of cherry and sour cherry from intracellular fermentation stand out. At the end, vegetal memories of fennel and eucalyptus emerge.
Elaboration:
The harvest is carried out manually, in 18-20 kg boxes. Vinification was made with whole bunches, without destemming, vatting it in a stainless steel tank. Starting the fermentation with our own yeasts, found in one of the plots of one of our winegrowers. It is devatted as if it were a red wine production, pressing and finishing fermenting only must. At the end of fermentation, they remain in the winery in the winery, seeking to keep the wines cloudy in order to avoid oxidation, keep the wines fresher, and remain on their fine lees to win in the mouth. Subsequently, they are stabilized and filtered for bottling. Making a white wine using carbonic steel makes the wines fresh and the must in contact with the skin extracts all those aromas from the skins such as salinity.
