Tasting notes
Our Rosado de Lágrima expresses the most delicate character of Lanzarote's traditional grape varieties. On the nose, it is clean and precise, with fresh red fruit, pomegranate, and a subtle floral touch reminiscent of dried petals. Citrus nuances and a fine minerality also appear, adding tension and connecting with the volcanic landscape. On the palate, it stands out for its freshness and balance. The entry is light yet very defined, with a lively acidity that sustains the entire wine. The red fruit reappears with clarity, accompanied by a slight, elegant bitterness that provides structure. The finish is dry, saline, and surprisingly persistent for a rosé, making it a very versatile wine.
Elaboration:
The grapes are hand-harvested and placed in small crates to prevent breakage and maceration of the skins upon arrival. The batches of grapes used to make this wine are analyzed from the beginning of their ripening process, which is monitored to accurately determine the harvest date. Once the grapes arrive at the winery, they are pressed, where the first pressing of the must, produced by the pressure of the grapes during the press filling, is separated. This free-run juice, with minimal contact with the skins, is fermented at a temperature of 17ºC. After fermentation, the wine is quickly racked and aged on its fine lees for one month. After this time, it is quickly clarified and filtered to highlight its freshness.
