Pleasant aromas of red fruits (strawberry, black currants, raspberry) accompanied by balsamic notes and nuances reminiscent of tomato leaves, very typical of the listán negro variety.
Elaboration:
Manual harvest of the harvest, deposited in small volume harvest boxes, to avoid breakage and maceration of the skins when receiving the grapes. The grape batches used to make this wine are analyzed from the beginning of their ripening, monitoring it, to accurately determine the harvest date. Once the grapes arrive at the facilities, they go to the press where we remove the first drain of must that is produced by the pressure of the grapes during the filling of the press. This yolk must, with little contact with the skins, is fermented at a temperature of 17ºC. After fermentation, a quick racking is carried out, and the wine remains on its fine lees for a month. After that time, it is clarified and filtered quickly to highlight its freshness.

The entire vineyard of this winery is phylloxera-free thanks to the sandy texture of the soil. The wine is highly aromatic with notes of currant, strawberry, and plum.
