This aged sweet wine is our interpretation and heir to the renowned 17th-century Canari wines that were exported to England. After an oxidative aging process of up to 65 years, we blend the best vintages to create a unique wine. Exclusive production of 823 bottles.

Sweet white wine made from the Malvasía Volcánica grape variety, crafted by blending three batches from the 1956, 1970, and 1997 vintages. The grape clusters are laid out on mats for several days, an ancient and nearly obsolete practice known as “asoleo”(sun-drying) which increases their sugar content through partial dehydration.

After the drying process, the grapes are pressed, yielding 30% of their juice. Alcoholic fermentation begins with selected native yeasts. The fermentation is halted by adding wine alcohol when the residual sugars reach about 70 g/L. The different vintages then undergo a long oxidative aging process in 500-liter oak barrels.

Tasting notes

Appearance: Amber, clean and bright. Aroma: Complex, powerful, with notes of ripe fruit, dried apricots, candied fruit, dried fruits and iodine notes from oxidative aging. Light hints of mushroom, truffle. Mouth: Fresh, silky, with a gentle palate, with an acidity that makes it balanced and voluminous, with a very long finish.

Elaboration:

This sweet vintage wine is our interpretation and heir to the famous Canari of the 17th century that were exported to England. To make it, we assembled three batches from the 1956, 1970 and 1997 vintages. These were made by sunning the Malvasía Volcánica clusters (clusters were placed on mats for several days) to increase their sugar proportion by partially dehydrating the grapes. After sun exposure, the grapes were pressed, obtaining 30% of their yield. Alcoholic fermentation began with its own selected yeasts. The fermentation of these wines was stopped by the addition of wine alcohol, when their residual sugars reached about 70 g/L. Afterwards, the different vintages were kept in a long oxidative aging in 500-liter oak barrels.
