Tasting notes
Appearance: Amber, clean and bright. Aroma: Complex, powerful, with notes of ripe fruit, dried apricots, candied fruit, dried fruits and iodine notes from oxidative aging. Light hints of mushroom, truffle. Mouth: Fresh, silky, with a gentle palate, with an acidity that makes it balanced and voluminous, with a very long finish.
Elaboration:
This sweet vintage wine is our interpretation and heir to the famous Canari of the 17th century that were exported to England. To make it, we assembled three batches from the 1956, 1970 and 1997 vintages. These were made by sunning the Malvasía Volcánica clusters (clusters were placed on mats for several days) to increase their sugar proportion by partially dehydrating the grapes. After sun exposure, the grapes were pressed, obtaining 30% of their yield. Alcoholic fermentation began with its own selected yeasts. The fermentation of these wines was stopped by the addition of wine alcohol, when their residual sugars reached about 70 g/L. Afterwards, the different vintages were kept in a long oxidative aging in 500-liter oak barrels.
