Deep cherry red with violet hues and a brilliant sheen, this Vijariego Negro offers a nose marked by wild red fruit, such as currants, accompanied by spicy nuances and subtle mineral and ferrous notes characteristic of volcanic soils. On the palate, the weight of the fruit and its freshness stand out, with a smooth and balanced passage that culminates in a complex and persistent finish.
Elaboration:
Fermentation takes place at temperatures close to 20ºC for about 8 days, with daily density measurements to determine the exact moment for racking. Maceration and alcoholic fermentation are carried out in a small-capacity tank, allowing for daily manual punch-downs, which are less aggressive than automated methods. This results in less extraction of tannins and green notes, and a medium color intensity. After racking and pressing, alcoholic fermentation finishes in the following days. Following alcoholic and malolactic fermentation, the wine remains in the cellar, in stainless steel tanks, for just over a year. During this time, the wine stabilizes and develops all the nuances that this variety offers.
