Tasting notes
Pale yellow with golden highlights, this semi-sweet Malvasía displays aromas of tropical fruits and white flowers, with a subtle mineral touch. On the palate, it balances sweetness and acidity with freshness and notes of molasses and fruit, leaving a lingering aftertaste.
Elaboration:
This Semidulce Malvasía is produced in conjunction with our Seco Colección. The process begins with grape selection in El Grifo's own plots and at our winegrowers', where we select the highest quality grapes. In the 2023 vintage, the grapes were picked on July 20, 2023. The bunches are transported to the winery in vintage boxes, weighing no more than 20 kg, to ensure they arrive in the best condition. They are kept at low temperatures for 24 hours and then pressed. The resulting must, after a 24-hour static settling, is inoculated with selected native yeasts, which have been previously isolated. When the must's sugars reach 20-25 g/l, fermentation is interrupted by rapid cooling, followed by filtering and stabilization.
