White wine made from Malvasía Volcánica grapes. The vines that produce this wine are pre-phylloxera and are cultivated under a mantle of volcanic ash.

This wine is produced alongside the Seco Colección. The process begins with the selection of grapes in the El Grifo vineyards and those of our winegrowers. In the 2023 vintage, the grapes were harvested on July 20th, 2023. The clusters are transported to the winery in 20 kg harvest boxes, kept at low temperatures for 24 hours, and then pressed.

The resulting must, after 24 hours of static settling, is inoculated with selected indigenous yeasts that have been previously isolated.

When the sugars in the must reach 20-25 g/l, fermentation is halted by rapid cooling, followed by filtration and stabilization.

Elaboration:

The Malvasía Semidulce Coleccion is made together with the Seco Coleccion. It begins with the selection of the grapes in the plots of El Grifo and our winegrowers, where we select the highest quality grapes. In the 2023 vintage, the grapes were cut on July 20, 2023. The bunches are transported to the winery in vintage boxes, not exceeding 20 kg in weight, so that they arrive in the best conditions, they are kept at low temperatures for 24 hours. and later they are pressed. The resulting must, after a 24-hour static settling, is inoculated with selected native yeasts, which have previously been isolated.
