Elaboration:
The Malvasía Semidulce Coleccion is made together with the Seco Coleccion. It begins with the selection of the grapes in the plots of El Grifo and our winegrowers, where we select the highest quality grapes. In the 2023 vintage, the grapes were cut on July 20, 2023. The bunches are transported to the winery in vintage boxes, not exceeding 20 kg in weight, so that they arrive in the best conditions, they are kept at low temperatures for 24 hours. and later they are pressed. The resulting must, after a 24-hour static settling, is inoculated with selected native yeasts, which have previously been isolated. When the sugars in the must reach 20-25 g/l, the fermentation is interrupted by rapid cooling, followed by filtering and stabilization.
