Tasting notes
Creamy sparkling wine with aromas of fresh white fruit, citrus notes, hints of white flowers and nuances of pastries. In the mouth it is clean, fresh and elegant. A wine with fine bubbles and a constant crown, energetic acidity and a fine and persistent finish.
Elaboration:
We made this natural sparkling wine for the first time using the Traditional Method (second fermentation in the bottle) in 1989, three years before we accidentally fermented a batch of bottles of Malvasía Semiseco, whose corks did not completely jump out of the bottle, this is when we saw that the Malvasía Volcanic was suitable for the production of sparkling wines. The production process is as follows: Base wine: Early harvest in 2015 so that the degree of the base wine does not exceed 10.5º. Tiraje: In 2016, addition of sugar and yeast base wine in an appropriate proportion to carry out a second fermentation in the bottle, following the Traditional Method. Maturation and disgorging: After aging on lees for at least five years, it is manually disgorged and released to the market progressively to maintain its freshness.
