A true oenological rarity in the Canary Islands, crafted and marketed by EL GRIFO since 1991, establishing the winery as a pioneer in the production of long-aged sparkling wines in the archipelago.

It comes from pre-phylloxera Malvasía Volcánica vines, between 40 and 60 years old, planted ungrafted on volcanic ash soils in the distinctive landscape of La Geria. The harvest is early, aimed at preserving the acidity and freshness that define its style.

The base wine is made with precision and elegance, and the sparkling wine takes shape following the Traditional Method, with bottle aging on lees for at least five years, before manual disgorgement without dosage — resulting in a pure, dry, and vibrant Brut Nature.

With fine, persistent bubbles, it reveals aromas of ripe fruit, toasted bread, and mineral notes, while on the palate it combines freshness, structure, and an Atlantic salinity that make it as unique as the land from which it comes.

Tasting notes

This Brut Nature stands out for its clean and elegant nose, where white fruit and citrus notes combine with a subtle minerality, a hallmark of our wines and praised by recent press reviews. On the palate, it is fresh and precise, with fine bubbles that add texture without obscuring the wine's purity. Well-defined acidity supports a lively and balanced character, while subtle hints of bread and a saline undertone emerge, prolonging the finish. A sparkling wine with a volcanic character, dry and food-friendly, faithfully reflecting the refined style of our winery.

Elaboration:

After aging on its lees for at least five years, the wine is manually disgorged and released to the market gradually to preserve its freshness. In the case of El Grifo sparkling wine, it also undergoes a minimum of 12 months of lees aging, which adds elegance, refines the wine, produces finer bubbles, and contributes aromatic complexity with notes of bread and pastries.
