Our most emblematic and widely enjoyed wine, the direct heir to the first young wines that EL GRIFO produced in Lanzarote from 1980 onwards.

It was then that the winery marked a milestone in Canarian oenology, introducing for the first time stainless steel tanks and temperature control systems that preserved the freshness and natural aromas of Malvasía Volcánica, the island’s native and predominant variety.

The result is a fresh, elegant and deeply Atlantic white wine, with notes of white fruit, flowers and subtle mineral touches that evoke the volcanic landscape of La Geria. On the palate, it is balanced and vibrant, with an acidity that enhances its varietal character and unmistakable island identity.

A wine that embodies the renewal of Lanzarote’s viticulture and El Grifo’s enduring fidelity to its roots.

Fresh and balanced, with an acidity that enhances its youthful character and lightness. Its finish is clean and persistent.

Tasting notes

The most faithful expression of Volcanic Malvasia, with an intense and defined aromatic profile, Atlantic freshness, and a full-bodied palate that envelops without losing vibrancy. The balanced acidity enhances its fruity and floral nuances, while a subtle saline touch prolongs its persistence, consolidating it as the winery's flagship.

Elaboration:

The plots chosen for this wine come from the central area of ​​the island. The maturity of its fruit has been controlled and measured throughout its development to determine the optimal harvest date, ensuring quality raw material. The bunches are transported to the winery in vintage boxes, not exceeding 20 kg in weight, so that they arrive in the best conditions, they are kept at low temperatures for 24 hours and are subsequently pressed. The resulting must, after a 24-hour static settling, is inoculated with selected native yeasts, which have previously been isolated. Once the fermentation is completed, the wine remains slightly cloudy at a temperature of 16ºC until bottling, to preserve the aromas of Malvasía Volcánica.
