At EL GRIFO, we have always been very clear that the land is our greatest asset. Lanzarote compels us to work with precision, humility, and a constant pursuit of authenticity. This philosophy has guided us for 250 years and continues to shape every new wine we produce.
Today, we are thrilled to present two harvest experiences born from this same vision: Listán Blanco Crianza en Fudre 2024 and Cofermentación 2024
LISTÁN BLANCO CRIANZA EN FUDRE 2024

Listán Blanco is one of Lanzarote's historic grape varieties, and despite its relatively small presence on the island, we firmly believe in its ability to express the elegance of the volcanic landscape. It is understated, profound, and capable of evolving with a finesse unexpected for such an extreme environment. That's why we decided to showcase it with a limited and meticulously crafted batch of just 4,000 bottles .
The grapes come from large pits in La Geria, in the area known as Bilbao, and were hand-harvested in August. Fermentation begins in stainless steel to preserve the varietal freshness and finishes in a new 3,000-liter French oak vat, where it rests for 12 months on its fine lees . This aging process adds structure and body without sacrificing the wine's precision or the volcanic character.
This wine displays aromas of ripe white fruit, subtle citrus, beeswax, and a hint of dried fruit. On the palate, it combines breadth, lively acidity, and a long, saline finish with hints of toasted almond and light honey. A true expression of Listán Blanco and its enormous potential.
COFERMENTACIÓN 2024

This wine is born from a small, co-planted plot beneath the Testeina mountain, a vineyard that guards the ancestral farming traditions of our grandparents.
In the past, different varieties coexisted in the field and were harvested together, seeking a spontaneous harmony that modern oenology had largely forgotten. Production is strictly limited: 7,000 bottles.
With COFERMENTACIÓN, we recover this practice not as a trend, but as the most honest way to translate the current climate and the landscape of Lanzarote. It is not about blending two finished wines, but integrating them from the very first moment. As our technical team states: "It is not Malvasía on one side and Vijariego on the other; it is a wine born balanced from its genesis."
Why these two varieties? Because nature made them complementary:

The Seduction (Malvasía Volcánica): Provides what we call the "embrace." It is expressive and aromatic, offering a friendly and enveloping volume on the palate. It is the seductive soul of the wine (approx. 60-70% of the blend).

The Tension (Vijariego Blanco): Acts as the backbone. A variety with high acidity, vertical and precise. It brings the seriousness, energy, and aging potential that balances the opulence of the Malvasía (approx. 30-40%).
The result is a perfect synergy: energy, lightness, and a profound sense of place.
The Key: A Technical Harvest We do not harvest by the calendar, but by technical criteria. We seek Vijariego with low pH and lively acidity, and Malvasía at its point of fresh aromatic ripeness. Ideally, they are harvested on the same day and co-fermented immediately upon vatting.
Winemaking:

Pressing: Whole-cluster (with stems) to add complexity and structure.

Fermentation: Starts in stainless steel with indigenous yeasts and finishes in a 3,000-liter French oak foudre.

Aging: It remains for one year in the foudre to refine its character.
Tasting Notes: A fresh, tense, and deep wine.

Nose: Displays white fruit, citrus, honey, and herbal nuances, set against an unmistakable saline background that evokes the island’s volcanic landscape.

Palate: Combines the tactile texture and volume of the Malvasía with the vibrant, electric acidity of the Vijariego. The finish is long, persistent, and offers a delicate smoky echo.
In the words of Xabier Kamio, our consulting winemaker:
"When we speak of co-fermentation, we are not talking about blending wines; we are talking about building a wine from its origin. Co-fermentation does not sum up profiles; it integrates them. It is a return to the past to understand the future: balancing alcohol levels and textures to achieve wines with energy, even in warm years."
ONE PHILOSOPHY, TWO COMPLEMENTARY PERSPECTIVES
Although both wines are born from different processes, they share the same idea: to showcase Lanzarote with honesty and respect. Listán Blanco Fudre is precision and restraint. Cofermentación is freshness, tension, and a reflection of the landscape.
Both represent a step forward in our commitment to age-worthy wines, produced in small batches and with patient aging on lees and in fine oak.
For us, introducing these two new wines is not just about expanding our collection. It's about delving deeper into who we are, into what we understand by making wine in a unique and extreme territory like Lanzarote.
