EL GRIFO is reinforcing its commitment to Lanzarote's unique grape varieties by highlighting Listán Blanco, a lesser-known grape capable of expressing the minerality and elegance of the volcanic landscape. Its understated character and aging potential make it a variety with great capacity for producing wines with aging potential and depth, always maintaining the identity of the terroir.

The grapes were harvested by hand in the first weeks of August. Fermentation began in stainless steel tanks to preserve the freshness and aromatic purity of the variety, and continued in a French oak foudre, where the wine rested on its fine lees for a year. This process provides structure, body, and a subtle integration of the oak, while respecting the varietal character and its distinct volcanic origin.

Elaboration:

The grapes, sourced from selected plots, were hand-harvested in the first weeks of August. Fermentation begins in stainless steel tanks to preserve freshness and aromatic purity. It is then completed in a French oak foudre, where the wine rests for 12 months on its fine lees. This process imparts structure, body, and a subtle oak character, without masking the varietal character or its volcanic origin.
