Tasting notes
Pale golden in color, with good density and bright highlights. Deep aroma of ripe white fruit, pear, and citrus notes, accompanied by dried fruit, beeswax, and dried flowers. On the palate, it is full-bodied and creamy, with lively acidity, toasty notes, and light honey; a long, mineral, and persistent finish.
Elaboration:
The grapes, sourced from selected plots, were hand-harvested in the first weeks of August. Fermentation begins in stainless steel tanks to preserve freshness and aromatic purity. It is then completed in a French oak foudre, where the wine rests for 12 months on its fine lees. This process imparts structure, body, and a subtle oak character, without masking the varietal character or its volcanic origin.
