Tasting notes
Pale, bright gold in appearance. Complex aroma with white fruit, citrus, honey, herbs, and a mineral touch. On the palate, it is ample, fresh, and balanced, with volume, vibrancy, and a persistent saline, citrus, and slightly smoky finish, marked by its aging in foudre.
Elaboration:
The selected batch is made from whole-cluster pressing, aiming for greater aromatic complexity and structure on the palate. After obtaining the must, it undergoes settling to remove the coarser particles, preserving the cleanest and most expressive fraction. Fermentation begins in stainless steel tanks with the inoculation of indigenous yeasts, previously selected in the laboratory. When fermentation is nearing completion, the wine is transferred to a 3,000-liter French oak foudre, where the process slowly concludes, gently integrating the nuances of the wood. After fermentation, the wine ages in the same foudre for a year, developing greater volume, texture, and elegant complexity before bottling.
