ABC. VIJARIEGO EL GRIFO, A UNIQUE EXPERIENCE

 

Journalist Pilar Cavero, in her review published in ABC , highlights the value of El Grifo's Vijariego as one of those "unique creations" that emerge from working in small plots and respecting minority varieties.

Originally from Jerez and arriving on Lanzarote at the end of the 15th century, the Vijariego grape found an ideal environment on the island. El Grifo's version comes from centuries-old vineyards cultivated traditionally on the Juan Bello mountain, within a protected natural area.

After the harvest, the wine ferments and ages for a year in 500-liter French oak barrels, giving it structure, complexity, and aging potential without losing its freshness or identity. Cavero highlights its notes of fennel, hay, and white flowers in the tasting, along with a creamy texture, saline notes, and a toasted background that reflect both the wine's volcanic origins and the careful aging process.
