
Respect for the land is one of the cornerstones of El Grifo's philosophy. Within the "Living Soils" project, the winery implements various practices aimed at regenerating the soil and improving its fertility naturally. One of the most significant is the production of vermicompost —also known as worm castings—an organic fertilizer obtained through the decomposition of plant matter by red wiggler worms (Eisenia fetida) and beneficial microorganisms.
The process utilizes organic waste from the vineyard and winery , such as leaves, branches, pomace, and grape skins generated during the harvest, which are deposited in a specially prepared area lined with recycled materials. Earthworms slowly transform this waste into a compost of high agronomic value, rich in nitrogen, phosphorus, potassium, and other essential micronutrients.
The result is a high-quality natural fertilizer that not only improves soil fertility and stimulates plant growth, but also increases water retention capacity , improves soil structure, and reduces reliance on chemical products . Furthermore, this humus is used to make " vermicompost tea ," a liquid solution used as a foliar or irrigation fertilizer, ideal for organic farming.
