Since 2010, Bodegas El Grifo has led an R&D project to improve the quality and adapt the production of local varieties (such as Malvasía Volcánica and Listán Negro) to market demands. Led by Xabier Kamio and Dr. Nicolas Bernard, the study analyzes factors such as ripening, microclimate, plant nutrition, and the impact of climate, using tools such as the Dyostem analyzer.
It includes lines of research on ripening, climate change, soil studies, and the selection of native yeasts to reinforce the identity of the terroir.
