Studies of maturation evolution: Dyostem

The Viticultural Development Project , initiated in 2010 and directed by Xabier Kamio (Az3 Oeno) and Dr. Nicolas Bernard (Vivelys), aims to maximize the native varieties of the Lanzarote DO (Malvasía Volcánica, Listán Blanco, Moscatel, Diego and Listán Negro), adapting their production to current market demands.

The project focuses on:
  • Characterization of crops and climatic factors , to improve the quality and stability of production.

  • Trials on grape ripening, microclimate and nutrition , aimed at a more efficient cultivation strategy.

  • Use of new qualitative metrics (Dyostem – Vivelys) , such as the evolution of sugar per berry and the color of the skin, to define vintage profiles and optimize aromatic potential.

Main lines of study:
  • Evolution of ripening: continuous analysis since 2010 to identify vintage effect and varietal differences

  • Climatic factors and harvest volume: relationship between climate and annual production

  • Viticulture and climate change: adapting to a warmer and drier scenario

  • Soils and waters of Lanzarote: ULL study on agricultural distribution and desalination water capacity

  • Selection of native yeasts: since 2018, work has been underway to isolate and preserve native yeasts, to replace commercial strains and obtain wines representative of the Lanzarote terroir
