For the first time in the history of European viticulture, a harvest is taking place this early, facing the conditions imposed by an impossible vineyard: without the possibility of mechanization, lashed by trade winds, and characterized by a lack of rainfall.
We modify the vine's growth cycle through early pruning in September, which allows us to bring the harvest forward to winter (around February). The goal is to avoid the frequent summer heatwaves, a consequence of climate change. This allows us to obtain fresh grapes with impressive acidity and appropriate sugar levels.
The end result is our Winter Harvest, a wine that captures all the freshness and expression of the little more than 250 kilos of Malvasía Volcánica harvested earlier than anywhere else in Europe. Without a doubt, a wine that makes history.
