COLOUR
Burgundy red, with violet edges, low layer due to the minimal intervention that has been made on the skin in its production process

NOSE
High intensity, floral notes of lavender, elderflower, and fruit. Varietal aromas of tomato leaf and fennel are also reflected. Due to the evolution in the bottle, aromas of candied fruit and dried apricots appear.

PALATE
On the palate, it reveals a vibrant youth and a charming freshness, which unfolds along the palate, leaving a pleasant final sensation of balsamic notes.
Tasting notes
A minimally fermented red wine that purely reflects the personality of Listán Negro from century-old vines. It combines freshness and harmony with a unique aromatic expression, where fruit and floral notes intertwine with herbal nuances and hints of dried fruit. Its lively character and elegance suggest a remarkable capacity for development in the bottle.
Elaboration:
The winemaking process is carried out in a traditional manner, similar to that of yesteryear, when advanced machinery was unavailable. Half of the grapes are destemmed manually, while the other half are placed whole, including the stems, into the tank. The tanks for this winemaking process are small, where fermentation begins at controlled temperatures. Thanks to the lack of oxygen and CO2 saturation, intracellular fermentation occurs within the grapes. At the same time, alcoholic fermentation takes place in the must generated by the pressure of the bunches. The time between the start of fermentation and treading is limited, which is why we say that in this type of production, no maceration with a skin is performed, since most of the grapes remain intact, nor are pumping overs carried out. Fermentation ends in steel tanks without stems or stems.
