Dry white wine made with Malvasía Volcánica grapes from Lanzarote. Made with grapes from pre-phylloxera vines planted as ungrafted rootstock which are 40–50 years old, grown in mineral-rich soil under a layer of volcanic ash.
PRODUCTION
The chosen plots for this wine are located in the centre of the island. Grape ripeness was controlled and measured all throughout to determine optimal ripeness for harvest, ensuring raw materials of the best quality.
The grape bunches were brought to the winery in picking bins not weighing more than 20 kg, so they get there under the best conditions. They were stored at low temperature for 24 hours and then pressed.
The resulting must, after settling for 24 hours, was inoculated with choice indigenous yeasts, which had been isolated beforehand. Once fermentation came to an end, the wine was kept at a temperature of 16 ºC with low turbidity until bottling to keep the distinctive aromas of the Malvasía Volcánica grapes intact.
TASTING NOTES
Appearance: Pale yellow with a greenish hue, clear and bright.
Aroma: The varietal character of Malvasía Volcánica predominates with floral aromas such as orange blossom and jasmine, evolving towards stone fruit aromas such as apricot.
Taste: Fresh and persistent, with body and an ample finish.
Its well-balanced natural acidity and salinity stand out.
