El Grifo, Malvasía with skins 2021, José Hierro

Monovarietal of Volcanic Malvasia from Don José Núñez's plot located in La Geria. The vines that produce this wine are pre-filoxeric, with ages ranging from 60-80 years. The wine has been aged in a concrete tank. The batch is a limited production of 1632 bottles.


PRODUCTION

The grapes were harvested on July 23, 2021. The bunches were moved to the winery the same day in 18-20 kg boxes, which were kept in the air-conditioned chamber until the next day. The whole bunches entered a small cylindrical concrete tank, undestemmed. Fermentation began with our own yeasts. The skin maceration was 10 days, without any intervention during fermentation. When the density was 1010, the tank was uncovered and pressed. Fermentation ended and aging took place in the cylindrical concrete tank, where it has been kept until April 4, 2022, when we proceeded to its transfer for the corresponding stabilization and bottling.

TASTING NOTES

Appearance: Straw-yellow, clean and bright. Aroma: The varietal character of Volcanic Malvasia dominates with terpenic aromas such as talcum powder. We can find ripe aromas reminiscent of apricot and medlar. Due to the maceration of the whole bunch, we obtained aromas of wild strawberry and spices such as curry. Palate: Very complex, with a deep mouthfeel. The intense salinity stands out, reminding us of its origin and proximity to the sea. On the palate it reminds us of those ripe aromas that we saw in the nose, especially apricot. Fresh, with volume and a long finish.
