Monovarietal of Volcanic Malvasia from the plot of Francisco García located in the Playa Quemada area, being one of the plots closest to the Atlantic Ocean (1950 m) and grown at a low altitude of just 143 m.s.n.m. This led El Grifo to carry out the first winter harvest on the European continent. The vines that produce this wine are pre-filoxeric, with ages ranging from 15-20 years. The wine has been partially made with alcoholic fermentation in a concrete tank. The batch is a limited production of 4182 bottles.
The grapes were harvested on April 6, 2022. The harvest was carried out manually by transferring the grapes the same day to the winery in 18-20 Kg boxes, which were kept in the air-conditioned chamber until the next day. Part of the batch was made with whole bunches in a small concrete cylinder tank, without de-stemming, and the rest in a stainless steel tank. Fermentation began with our own yeasts. The must maceration with the pips was 10 days, without any intervention during fermentation. When the density was close to 1010 g/L, the tanks were uncovered and pressed. Fermentation ended in a stainless steel tank, with a 4-month aging with its lees, finishing in August with its stabilization and filtration before bottling.
Appearance: Pale straw yellow, clean and bright. Aroma: The varietal character of Volcanic Malvasia dominates with terpenic aromas such as rose, orange blossom, orange peel, guava and slight aromas of cherry and wild strawberry from the intracellular fermentation to which the wine was subjected. Finally, vegetable aromas such as fennel or eucalyptus can also be appreciated. Palate: Very complex, with a deep mouthfeel. Salinity stands out, reminding us of its origin and proximity to the Atlantic Ocean. On the palate it recalls those mature aromas that we saw in the nose, especially apricot. Fresh, with volume and a long finish.
