Este vino nació de nuestra Syrah cultivada en la finca familiar de Testeina en 2019. Por la singularidad de sus cualidades y el privilegio otorgado por la Fundación José Saramago, lo dedicamos a conmemorar el centenario del gran escritor (16/XI/2022). Cada sorbo es un homenaje a su legado, una celebración íntima del tiempo y la tierra que evocan sus palabras.

Se presenta con un bello rojo Borgoña, realzado por delicadas aristas violáceas. De alta intensidad aromática, seduce con un bouquet floral donde se despliegan evocadores recuerdos de lavanda y flor de saúco, acompañados de la frescura jugosa de la fruta. Los aromas varietales, como la hoja de tomate y el toque anisado del hinojo, se entrelazan armoniosamente. Con el tiempo en botella, emergen voluptuosos aromas de fruta escarchada y orejones, aportando profundidad y complejidad. En el paladar, es fresco, armonioso y sorprendentemente longevo. Cada sorbo invita a explorar sus múltiples capas, dejando una sensación perdurable y elegante.

Tasting notes

Visually, it has a light color layer due to minimal extraction and the elimination of pump-overs, showing a Burgundy red with violet hues. On the nose, it offers medium-high intensity, with fruity notes and floral hints of elderflower, along with varietal aromas from Listán Negro, such as tomato leaf and fennel. On the palate, it is complex and enveloping, silky and smooth, with elegant, mature tannins.

Elaboration:

The clusters were carefully placed in our climate-controlled room. Two days later, we meticulously destemmed them, ensuring most of the grapes remained intact in the vat. We inoculated the previously isolated yeasts from El Grifo to initiate fermentation. Once this stage was complete, we left the grape skins in the vat for two more days before pressing and returning the wine to the tank, where it waited for malolactic fermentation to occur spontaneously. The wine remained in the tank for approximately two years, and seeing its excellent evolution, we decided not to transfer it to barrels.
