On the palate, a positive evolution is noticeable; the fruit remains the main feature but now presents softer sensations and hints of slightly riper fruit.

Tasting notes
Visually, it has a light color layer due to minimal extraction and the elimination of pump-overs, showing a Burgundy red with violet hues. On the nose, it offers medium-high intensity, with fruity notes and floral hints of elderflower, along with varietal aromas from Listán Negro, such as tomato leaf and fennel. On the palate, it is complex and enveloping, silky and smooth, with elegant, mature tannins.
Elaboration:
The clusters were carefully placed in our climate-controlled room. Two days later, we meticulously destemmed them, ensuring most of the grapes remained intact in the vat. We inoculated the previously isolated yeasts from El Grifo to initiate fermentation. Once this stage was complete, we left the grape skins in the vat for two more days before pressing and returning the wine to the tank, where it waited for malolactic fermentation to occur spontaneously. The wine remained in the tank for approximately two years, and seeing its excellent evolution, we decided not to transfer it to barrels.
