Listán Negro Grano a Grano

PRODUCTION

The grapes were harvested on July, 2021, and transported in small boxes to the winery to avoid breakage of the grapes during transport. It emulated a winemaking process like those of yesteryear, when there were not enough machines or tools for winemaking. Therefore, in the same batch of grapes, half were destemmed by hand, and the other half, the whole bunch was introduced into the tank, that is to say, with its stalk. The tanks used for this vinification were small cubicles, 1.000 liters, where fermentation began with indigenous yeasts. The temperature was controlled by leaving these tanks in a cold room, where they remained at a temperature of between 16-19ºC.

In this type of winemaking, maceration with the skins is not carried out, since the grape berry remains intact in most of the grapes. For this reason, no pumping over was carried out; the only extraction of the skins took place during the crushing of the grapes, which lasted 2 hours. Finally, on August 6, 2021, the grapes were devatted and pressed. After this process, with the skins and stems removed, alcoholic fermentation was completed. Once the fermentation was finished, it was filtered and bottled on September, 2022, since then it has been aging in the bottle. The entire process was carried out without adding sulfites.

TASTING NOTES.

Appearance: Burgundy red with violet edges.

Aroma: Aroma: High-intensity floral notes reminiscent of lavender, elderflower and candied fruit with cherry.

Taste: Fresh, harmonious and long-lived.
