El Grifo, Malvasía Seco Colección 2022 75cl
Dry white wine made from Malvasía Volcánica grapes. The vines that produce this wine are pre-phylloxera vines which are 40 to 60 years old, grown under a layer of volcanic ash.
PRODUCTION
These Malvasía Volcánica grapes, carefully picked, come from El Grifo and some plots from our best vinegrowers. For the 2022 vintage, the harvest started on July 21st, as the grapes were reaching its optimal maturity throughout the different areas of the island. Grape bunches where transported to the winery in 18-20 Kg. crates and kept in cold storage for 24 hours. After decanting the must -grape juice- for another 24 hours, we inoculate it with selected yeast from our own vineyards. Once fermentation was finished, the wine was left unfiltered at 16ºC to preserve the floral character of this variety until bottelled, where the date is printed on the label.
TASTING NOTES
Colour: Pale yellow with greenish hues, clear and bright.
Aroma: From the varietal character of Malvasía Volcánica with floral aromas such as orange blossom and jasmine, evolving towards stone fruit aromas such as apricot.
Taste: Complex. Fresh, with body and an ample finish. Balanced natural acidity and salinity.
