The Listán Negro variety (ungrafted root stock, pre-phylloxera vines) is only found in the Canary Islands. In Lanzarote, due to the volcanic sand that covers the island, it results in a unique wine with a light structure that is original, aromatic and easy to drink.

PRODUCTION PROCESS

The Listán Negro variety (ungrafted root stock, pre-phylloxera vines) is only found in the Canary Islands. In Lanzarote, due to the volcanic sand that covers the island, it results in a unique wine with a light structure that is original, aromatic and easy to drink.

In the past, extending the maceration process (aimed at extracting more anthocyans than what this variety tends to offer) resulted in sour and astringent wines, primarily due to the aggressive tannins in the seeds. It appeared that Listán Negro grapes could be used to make excellent rosé wines, but not good red wines.

For more than a decade, El Grifo has managed to make a renowned Listán Negro red wine by processing homogeneous grape batches, not squeezing the grapes to avoid breaking excessively green or mature grapes, arranging shorter macerations at very controlled temperatures, and separating grape skins from the juice before completing the alcoholic fermentation. Afterwards, some of the batches are transferred to barrels and then blended with the rest of the wine to be used for the reds in the Listán Negro Collection.
