CLASSIFICATION
Semi-sweet white wine. Appellation Lanzarote.
GRAPE VARIETY
100 % Malvasia.
WINEMAKING METHOD
With grapes from our family vineyard. Once destemmed and crushed, we chill the grapes to 12 ºC and then select only the must drained before pressing.
Controlled fermentation is begun and then interrupted (by centrifuging and chilling to 0 ºC), once the residual sugars reach approximately 18 g/l. Finally, the wine is clarified and filtered to prevent possible cloudiness before bottling.
BASIC PRINCIPLES
Attaining a wine made from the grapes produced in our own vineyards, in which the natural sugars present in the Malvasia enhance its qualities. Limited production according to vintage.
WINE-TASTING CHARACTERISTICS
Appearance Straw-yellow. Clean and brilliant.
Nose Intense varietal. Quince and ripe fruit.
Palate Pleasant and gentle going down. Balance between sourness and sweetness.
FOOD PAIRING
Shellfish, fish in sauces and baked and semi-cured cheeses and desserts.
CULTURAL
The drawing on the label was made by César Manrique.
