Winemaking Method:
Manual harvesting in 20 kilo crates. The perfectly ripe grapes are selected on our El Grifo Estate. Complete de-stemming of the grapes and maceration of the must and first pressing. 24 hours decantation to achieve a clear and balanced must.
The alcoholic fermentation begins in stainless steel tanks and is completed in new 300 litre French and Central European oak casks. Once fermentation has completed, the must is aged in the casks for 10 weeks to capture the oak flavours and yeasts by gentle stirring of the lees. A light clarification is carried out before bottling and aging in the bottle to harmonise the nuances.
Basic Principles:
Achieving a special and innovative wine following personal selection in the specified vineyards, permitting the maximum expression of our grape, the Malvasia. Limited production depending on vintage.
Wine-tasting Characteristics:
Appearance: yellow with greenish glints. Clear and brilliant.
Nose: Mineral notes preceded by the fruitiness and sweetness of Malvasia, with a light smoky touch, with a finish of the new oak.
Palate: Structured and fresh. Strong and suave with very persistent fruit and mineral flavours. Vanilla, coconut and toasted reminisces from the wood.
Pairing with Food:
Rice, pasta, fish and poultry. Sweet/salty harmony.
