CARD: MOSCATEL DE ANA

Grape variety:
100 % Moscatel.

Winemaking Method:
Harvest is carried out by hand in 20kg crates at the beginning of September, with a potential alcoholic content of 14%. The grape is de-stemmed and before pressing a pre-fermentative skin maceration is carried out.

After the wine is decanted into isothermal tanks, fermentation begins at a controlled temperature of 16-18ºC. Fermentation is then delayed at a density of 1 035-1 040, equivalent to 90-100g/l of natural sugars. Wine alcohol is added to reach the 15% content needed for them to age in barrels according to the solera system.

Wine-tasting Characteristics:
Appearance: Glossy, iodised amber
Nose: Dried and over-ripe fruits, raisins with an aromatic and herbaceous depth.
Palate: Welcome on the tongue with potent, but not excessive, sweetness. It is concentrated with clear aromas that span the range of the palate.

Basic Principles:
To maintain a Moscatel of high alcoholic content using the solera system - a classic method of making traditional sweet wines.

Pairing with Food:
Possible accompaniment to blue cheese and strong, intense flavours and puddings. A dessert wine to accompany aromatic coffees.

Cultural:
The wine bears the name of Ana Brito, born in el Grifo in 1881, the same year as our soleras.
