Winemaking Method:
Manual harvesting in 20 kilo crates during the second fortnight in August. Complete de-stemming of the grapes and chilled maceration (14ºC) to achieve more lively and fruity aromas before fermentation begins. Frequent racking of the must to build body and a deeper colour. Fermentation at 25ºC. Tapping after a short maceration once fermentation is complete.
Basic Principles:
Achieving a mature and full-bodied but fruity and aromatic wine, made more complex by the contribution of the oak used during aging for at least 4 months and that expresses the potential and uniqueness of our volcanic Black Listan grapes.
Wine-tasting Characteristics:
Appearance: Deep red with deep layers, mature, clear and very brilliant.
Nose: Very characteristic of the Black Listan grape. Lightly spicy mineral and mature red fruit tones. Well complemented with mocha, light roasted hints and nutty touches contributed by the aging in oak casks.
Palate: Full-bodied, tasty, with mature and well harmonised tannins. Easy and persistent. Well structured palate, flavourful, fresh and with an ample and delicate finish with recurring citric and floral tones.
Pairing with Food:
Unpretentious meat dishes, medium cured sausages.
